Vinification After the first thinning of the grapes after veraison, the manual harvest in a box allows a further careful selection. In the cellar the grapes are disparate and gently crushed to allow a greater surface of contact to the wine with the skin during the alcoholic fermentation, which takes place in steel vats at a constant controlled temperature until the total exhaustion of the sugars. At the end of this first phase in wine it is decanted to eliminate the coarsest lees and left to rest on its noble lees, which, thanks also to the constant storage temperature, they help the performance of malolactic "fermentation".
Ageing It ages in 25HL oak barrels and, in part, in second-pass barriques. It is still aged in the bottle before being released on the market.

    La cantina nasce nel 1988 quando Raimondo Cusmano lascia la città e le sue origini siciliane con la famiglia, per dar vita al sogno di produrre vino.

    Il sogno diventa realtà e i progetti negli anni si espandono: oggi la nostra azienda conta 50 ettari di vigneto nel Monferrato, in Piemonte.

    La passione di Raimondo è ora condivisa anche dal figlio Daniele: il loro legame si è concretizzato con una linea di vini che racchiude nelle iniziali dei loro nomi la selezione delle migliori uve.
