Vinification	Red winemaking is carried out in special new-generation fermenters with dynamic skin maceration through punch-downs and alcoholic fermentation at a controlled temperature. Aging continues in steel tanks in contact with fine lees, which are activated with frequent bâtonnage. Racking and filtration are performed in the absence of oxygen using inert gases to protect the wine from potential oxidation. The wine is bottled without fining or tartaric stabilization to preserve the natural characteristics of the product.
