Vinification	Red winemaking takes place in special, new-generation fermenters with dynamic maceration of the skins through punching down, and alcoholic fermentation at controlled temperatures. The aging continues in oak barrels, in contact with its fine lees, activated with frequent bâtonnage. Racking and filtration are done in the absence of oxygen using inert gases to protect the wine from potential oxidation. The wine is bottled without clarification and tartar stabilization to maintain the product's natural integrity.

Pairing	It pairs perfectly with roasted red meats, game, and wildfowl. In vegan cuisine, it pairs wonderfully with bean and spelt medallions. Serve at 18° - 20° C in a large glass. Due to the absence of sulfites, we recommend consuming the product within two days of opening.

It is a wine of strong character and personality, with an intense ruby red color and slight garnet reflections; elegant and vinous.

It offers pleasant hints of vanilla due to its balanced maturation in oak barrels.

The taste is dry and full-bodied, with a slight initial tannic note that evolves into complex spice aromas of excellent depth and good persistence.
