Vinification | After destemming, a gentle pressing takes place, followed by alcoholic fermentation at low temperatures. The aging continues in stainless steel tanks, in contact with its fine lees, activated by frequent bâtonnage. Racking and filtration are done in the absence of oxygen using inert gases to protect the wine from potential oxidation. The wine is bottled without clarification and tartaric stabilization to maintain the product’s natural integrity. |

Cultivated on the estate on soils particularly suited due to their high percentage of clay and limestone. Pale straw yellow in color with slight coppery hues. It has great personality, a dry taste, and an intense, persistent aroma that recalls bread crust and dried herbaceous essences.
