Vinification Harvested in mid August, the grapes are carried in the cellar in boxes for soft and progressive pressing. The must is fermented in barriques until the sugars run out. During the refinement, a part of the mass is left to undergo the malolactic fermentation. The following spring the base wine is added with selected sugars and yeasts, then bottled. Stored in a cool place away from light, where refermentation will take place, so they can rest in contact with its own yeasts for a minimum of 60 months. After this period they are transferred to the pupitres for the traditional manual remuage for clarification and obtain the thickening of the natural sediment in the neck of the bottles. They will then be disgorged, filled with the same wine and re-corked.

La passione di Raimondo è ora condivisa anche dal figlio Daniele: il loro legame si è concretizzato con una linea di vini che racchiude nelle iniziali dei loro nomi la selezione delle migliori uve.
