Vinification The grapes come from a vineyard with excellent exposure of more than 50 years: the slight over-ripening is harvested to have a greater concentration of aromas and a higher final alcohol content: they are vinified in white through a light soft pressing; follows fermentation at controlled temperature in a protected environment and in the absence of oxygen. At the end of the fermentation, a period of aging in steel for several months follows, where frequent batonnage is carried out to keep in suspension of the fine lees to have a greater structure on the palate thanks to the mannoproteins naturally present in the latter. Filtration and bottling follows.

Fragrance Hints of peach, dog rose, citrus fruits (bergamot, grapefruit) and medlar. Extremely balsamic and sage notes also stand out on the nose
Flavor Sapid, very intense, complex
Pairing Fish dishes, also with an important flavor, shellfish, first courses based on pumpkin, medium-aged and blue cheeses. The combination with Foie Gras is interesting
