White wine is made using various techniques that process white grapes so that only the juice is kept and the skins are removed. It can also be made from black grapes (Pinot Noir, for example) by separating the skins from the juice straight away, unlike red winemaking, where the skins are also macerated to extract their colour and compounds. Its colour ranges through many shades of yellow, from greenish to amber, by way of straw and gold. It usually shows floral and fruity aromas and should be served at 8–14 °C.

It pairs best with fish, shellfish, crustaceans, vegetables and white meat, and in general with quickly cooked dishes and light sauces.
