A Sauvignon picked at night: the Friuli Colli Orientali DOC 2023 from Ronco dei Pini is the wine the estate works hardest on — three passes through the vineyard and a reductive vinification.

100% Sauvignon, trained to double Guyot. Harvest happens in three passes — early, at ripeness and overripe — at night, without light and at low temperatures; in the cellar the grapes are handled under reductive conditions. The wines stay separate until blending at the end of April. 13% vol.

In the glass, straw yellow. On the nose, citron, wild rosemary, flat peach and white pepper. On the palate it is saline and citrusy, with a herbal return and long persistence.

A Friulian Sauvignon without the usual green exuberance: taut, salty, precise.

Recommended pairings: as an aperitif, with fish antipasti and shellfish, asparagus risotto, herb omelettes.

The Novello family hand-harvests the 11 hectares of cappuccina vineyards to ensure the best possible selection of grapes from which high-quality wines are produced: from the oldest vineyards come the grapes destined for the brand “Ronco dei Pini”.

Majestic red wines that enjoy being matured in French oak barriques to accompany every special occasion, elegant white wines with enveloping aromas to enhance light dishes and tantalizing appetizers, and finally lively bubbles to brighten evenings with friends. A journey through the typical flavors of Friuli through native and classic wines.

The winery is located in northeastern Friuli, specifically in the municipality of Prepotto in the Judrio Valley, where vineyard cultivation is influenced by the cool, breezy microclimate with significant temperature variations that occur especially in the summer season around harvest time.

The proximity of the mountains to the north and the sea to the south allows for constant ventilation. The temperature variations enrich the aromatic profile of the grapes, giving them the unmistakable characteristics of the area that produces Friuli Colli Orientali DOC wines.
