| Vinificazione | The grapes are hand-picked between late September and early October and left to dry slightly. They are then crushed, destemmed and placed in steel tanks, where the must macerates and ferments on the skins for about 20 days, going through malolactic fermentation at the same time. After racking the wine ages 36 months in French oak barrique, after which the best barrels are blended in steel for about 3 months. It then completes 24 months in bottle. |

The most awaited wine of the estate: the Rosso Riserva DOC 2019 from Ronco dei Pini is released after five years between wood, steel and bottle.
50% Merlot, 30% Schioppettino di Prepotto and 20% Cabernet, trained to double Guyot. The grapes are hand-picked between late September and early October and lightly dried, then given 20 days on the skins with malolactic fermentation. Then 36 months in French oak barrique, blending of the best barrels in steel for about 3 months, and 24 months in bottle. 13% vol.
In the glass, ruby red. The nose is intense, decisive and aromatic, with a complex bouquet: forest fruit, redcurrant and plum meet cinnamon, pepper, liquorice and clove. The palate is no less: warm and persuasive, with a long, dry finish.

Recommended pairings: red meats, game and mature cheeses. Also good as an after-dinner wine. Serve at 16-18 °C.
