| Vinificazione | We hand-pick the grapes at the end of August, destem them and press them gently to preserve the primary aromas. Once fermentation is complete the wine goes on to the Charmat-method second fermentation and ages three months on the lees. After bottling it rests a further two months before drinking. |

A brut sparkling wine from Ribolla Gialla: "Tre Lune" Millesimato 2023 from Ronco dei Pini takes the native Friulian grape into bubbles without losing its freshness.
100% Ribolla Gialla, trained to double Guyot. The grapes are hand-picked at the end of August, destemmed and gently pressed to protect the primary aromas. Second fermentation by the Charmat method and three months on the lees, then two months in bottle. 11.5% vol.
In the glass, straw yellow, with a fine, persistent perlage. On the nose, harmonious, fresh citrus notes stand out. On the palate it shows the freshness typical of the variety, rich in structure and fruit.
The Ribolla you usually drink still — here with bubbles.
Recommended pairings: an excellent aperitif, light fresh antipasti, vegetable and fish crudités. Serve at 7-8 °C.
