| Vinificazione | The grapes are hand-picked and, once crushed and destemmed, placed in steel tanks. The must macerates and ferments on the skins for about 20 days, going through malolactic fermentation at the same time. After racking, part of the wine ages in French oak barrique. Bottling is usually mid-December, followed by a further 2-3 months in bottle. |

A Friulian Cabernet Sauvignon: the Friuli Colli Orientali DOC 2022 from Ronco dei Pini pairs the structure of the international variety with local restraint.
100% Cabernet Sauvignon, trained to double Guyot. Hand-harvested; after crushing and destemming the must macerates and ferments on the skins for about 20 days, going through malolactic fermentation at the same time. Part of it ages in French oak barrique. Bottled in mid-December, then 2-3 months in bottle. 13% vol.
In the glass, deep, decisive ruby red. On the nose, a delicate aroma of forest fruit and redcurrant, with a light herbaceous note. On the palate it arrives properly warm and tannic, very long, with a harmonious finish.
Structure without weight: Cabernet as Prepotto makes it.
Recommended pairings: delicately flavoured red meats — braises and pot roasts — but also bistecca alla fiorentina and entrecôte. Serve at 16-18 °C.
