| Vinificazione | Manual harvest between late September and early October from calcareous-clay soil with volcanic and basaltic outcroppings. In the cellar, destemming with 60% crushing, 3-day cold maceration, fermentation for 10-15 days at 16-17°C. |

Cabernet Franc and Carmenère: two varieties of ancient French origin that find in the Colli Berici — and the Carmenère in particular — a rare, ideal home in Italy. Hand harvest between late September and early October from calcareous clay soil with volcanic and basaltic outcrops. In the cellar, destemming with 60% crushing, 3-day cold maceration, fermentation for 10-15 days at 16-17°C. Ageing in French oak barriques and tonneaux for 10 months, then in stainless steel tanks for at least 12 months, followed by 5-6 months in bottle before release.
In the glass, an intense ruby red with garnet reflections. The nose is clean and complex: violets, cherry blossom, sage and sour cherry open onto fresh spices of anise and cardamom. On the palate acidity and tannins are well balanced, with hints of blackberry, earth and bell pepper — the unmistakable signature of Carmenère. Good structure and a persistent finish that grows with time.
Recommended pairings: game, roast beef, aged and flavourful cheeses.
