Colli Berici DOC Extra Dry Rosé Sparkling Wine “Rosa dei Berici” - Le Pignole

A rosé sparkling wine born in a special place: Brendola, the gateway to the Colli Berici, where limestone soils rich in marine sediments meet volcanic and basaltic outcrops, creating a terroir unique in all of Veneto. The protagonist is Tai Rosso — the native grape that is the symbol of the Colli Berici, a relative of French Grenache — grown on these hills for centuries and adapted to the microclimate and soil like no other.

Hand harvest into crates in the third week of September on calcareous clay soil with volcanic and basaltic outcrops, east-west exposure, trained as doppio capovolto (double arched cane). In the cellar, destemming with 60% of the grapes crushed, followed by 15 hours of cold maceration (5-6°C) and 10 days of fermentation at a controlled 13-14°C. Ageing in stainless steel tanks for at least 4 months, then second fermentation in autoclave for 55 days — just the right time to build fine, persistent, elegant bubbles.

In the glass, a refined old rose, bright and inviting. The nose is a fresh, fragrant bouquet: cherry, wild berries and a delicate floral note that opens the first sip lightly. The palate is harmonious, fresh and fruity, with an easy drinkability and a fine mousse that carries through to a clean, pleasantly savoury finish. The character of Tai Rosso comes through: not an anonymous sparkling wine, but one with a sense of place and personality.
