Zibibbo is one of the oldest and most fascinating grape varieties in the Mediterranean — brought to Sicily by the Phoenicians, cultivated for centuries on the island of Pantelleria, and now reinterpreted by Marchese delle Saline on the hills of Marsala and Petrosino, at 150 meters above sea level on medium-textured soils with a prevalence of clay. A grape with an unmistakable personality, which finds its ideal habitat in Sicily: sun, dry heat, close to the sea.
100% Zibibbo from 3 hectares of 12-year-old vineyards, Guyot-trained with a density of 3,500 plants per hectare. Harvest in August-September, soft pressing. Fermentation takes place in stainless steel for 20 days at a low temperature (16-18°C), without malolactic fermentation — to preserve the full aromatic charge of the grape variety. This is followed by 60 days of bottle aging before release.
In the glass, it presents a bright golden color. The nose is aromatic and enveloping: ripe apricot, acacia flowers, and honey in a rich, warm, and Mediterranean bouquet. On the palate, it is structured and sweet, with a full body supported by a good acidity that balances the sweetness and leads to a long and pleasant aromatic persistence. A wine that carries all the sun of western Sicily.
An unconventional wine, for meditation or dessert — to be uncorked slowly and savored to the last drop.
Recommended pairings: blue and aged cheeses, dry pastries, fruit tarts, Sicilian cannoli. Excellent on its own as a meditation wine.
