A Piedmontese sparkler made the proper way: nine months in steel, then refermentation in bottle with a month on the lees, and finally disgorging.
95% Cortese and 5% Favorita. Refermented in bottle, disgorged, with no sediment. 13% vol.
Pale, elegant straw yellow with greenish reflections and a lively yet delicate perlage. The nose gives pome fruit, green apple, yellow plum and white flowers. The palate is harmonious and well balanced, pleasantly savoury and persistent: the bubble is never intrusive, it caresses the palate.
The refermentation in bottle shows in the fineness of the bubble.
Recommended pairings: perfect as an aperitif and with simple, sociable food, from pizza to a burger and chips.
