100% Viognier — an aromatic and seductive grape variety, grown at 250 meters on calcareous marl mixed with clay with a south-west exposure. Harvested by hand around late August, when the fruit is at its aromatic peak. In stainless steel tanks, a 24-hour pre-fermentation cold maceration precedes pressing and skin removal; this is followed by spontaneous fermentation with indigenous yeasts (7-10 days) and malolactic fermentation, to soften the structure and add roundness. Aging in stainless steel for 6 months preserves all the freshness and vibrancy of the fruit.
In the glass, it presents a luminous straw yellow color with golden reflections. The bouquet is explosive and floral: white peach, apricot, orange blossoms, and a subtle note of sweet spices typical of Viognier. On the palate, it is soft and enveloping, with a well-balanced freshness and a long, persistent finish with fruity and floral notes.
Only 800-1,000 bottles produced — an absolute rarity for those who want to discover an unconventional Tuscan white.
Recommended pairings: fish appetizers, sushi, tagliolini with shrimp and saffron, fresh cheeses, Thai and spicy cuisine.
