The companySimonetti Wineswas founded in 1950 and has been active in the production ofVerdicchiotoStaffoloDino Simonetti, together with his wife Maria Schiavoni, began with one hectare of vineyard in the Castellaretta district. That initial hectare of vineyard is still in production today and forms the basis of ourStaphylè.

At the turn of the millennium, with the gradual entry of the grandchildren into the company, the focus shifted to bottled wine production. The aforementioned Staphylè was bottled for the first time in 1999, marking the start of a new company direction aimed at producing quality wine.

Michele, Mirco and MassimoDino's grandchildren currently lead the company, following the path their grandfather began. This path has led the company to convert to organic farming, reduce sulfur dioxide in its wines, and adopt cellar practices that respect the raw materials, the land, and the end consumer.

Vinification takes place separately for each parcel, starting with a gentle pressing of the grapes, from which we select only the free-run must. Aging takes place in stainless steel and cement tanks, preserving the characteristics of the grape variety and each plot.

A historic company in the municipality of Staffolo, Vini Simonetti is also looking to the future, with plans to build a tasting room overlooking the old Staphylè vineyard, perfecting the classic method production from Verdicchio grapes, and producing wines of great elegance and longevity.

Territory and VerdicchioStaffolo and Verdicchio have always gone hand in hand. Staffolo, and especially the Castellaretta district, where the winery and most of the vineyards are located, consistently produce wines with good structure and rich flavor. The soils are sandy-clayey and, above all, rich in calcium carbonate. Staffolo's 442 meters above sea level also contribute to the significant temperature ranges during harvest, which lend finesse and elegance to the wines. Staffolo is undoubtedly one of the Verdicchio crus, and the Castellaretta district is certainly a grand cru. Verdicchio is among Italy's most prestigious white grapes. When young, it is edgy, with acidity and flavor that encourage drinkability. It reaches its peak after some time in the bottle, where it acquires complexity and elegance, and where its harshness softens. Verdicchio produces fresh and agile wines, structured and important wines, as well as classic method wines of great finesse and complexity.
