Viaboschi

VIABOSCHI is a young farming business born from its founders' wish to return to their roots. A culture of food, and therefore of wine too, is part of their families' history, so nothing was easier than starting again from growing vines. In 2013 a vineyard was planted for PROSECCO SUPERIORE DOCG at Refrontolo, one of the 15 historic municipalities of the CONEGLIANO VALDOBBIADENE DOCG. Later, again at Refrontolo, an old vineyard with more mature vines producing excellent-quality grapes was restored for red wine.

QUALITY is the mission of the business and the deciding factor in every choice made and yet to be made: quality of the environment, the vineyard, the grapes and the wine. These four aspects are considered indispensable, and each carries real weight in making a high-quality sparkling wine.

All the work, from pruning and treatments to harvest, winemaking and sparkling-wine production, is carried out and coordinated in person. Pruning follows the phases of the moon, respecting the plant's life cycle. Protective treatments are based on integrated pest management, aiming to reduce the number of interventions while still safeguarding the health of vine and grape. The harvest is exclusively by hand, timed and selected according to the type of sparkling wine being made. Gentle pressing of the grapes, fermentation of the must at low temperatures in steel tanks and the second fermentation in autoclave at 15° complete the production cycle.

Time on the lees ranges from 60 days for the EXTRA DRY and BRUT to 180 days for the "SENZA" BRUT NATURE.
