Il Saloncello comes from a technique documented in a Valtellina text of 1834: whole grapes and lightly crushed grapes are vinified together, for a wine that is more fragrant and richer in aroma.
Nebbiolo (Chiavennasca) from strict selection, made only in the best vintages. Six months' ageing in oak tonneaux. Terrazze Retiche di Sondrio IGT, 2017 vintage, 13% vol.
Ruby red of good intensity, with some purple reflections, lively and bright. The nose is elegant and varied, with intense memories of blackberry, blackcurrant and raspberry, closed by clear peppery notes and a little spice. The palate opens with wide vinosity and softness, but this is a thoroughbred wine of excellent body: to its immediate freshness it adds a complexity that assures real longevity, with a well-balanced tannic impression.
Drinkable from the autumn after the harvest, yet it holds years in bottle.
Recommended pairings: dry pasta dishes with complex, piquant and rich flavours, and both white meats and poultry.
