| Vinificazione | Harvested around mid-August, the grapes are picked and brought to the cellar in crates for gentle, gradual pressing. The must is then fermented in stainless steel at a controlled temperature until the sugars are exhausted. Then, after an initial racking, the must is racked off. |

A classic-method sparkling wine with zero dosage: the Alta Langa DOCG Extra Brut Pas Dosé 2016 from Tenute Rade comes from high-altitude Piedmontese vineyards and spends 67 months in contact with its own lees.
70% Chardonnay and 30% Pinot Nero, harvested into crates in mid-August, gently pressed, fermented in steel and aged on the fine lees. Second fermentation in bottle, 67 months on the lees, manual riddling on pupitres and disgorgement with no liqueur d'expédition. 12.5% vol.
In the glass, a pale yellow with fine, persistent perlage. On the nose the aroma is fine, full and delicate. On the palate the freshness of the acidity meets a bread-crust aftertaste.
