For 5 generations, Distilleria Bosso has been producing high-quality Grappa using pomace from Piedmontese grapes.

The company, while researching new products in line with market trends, still follows traditional distillation methods today, which involve the use of copper stills, the discontinuous steam method, and slow processing times, to obtain the highest product quality.

The distillery is still based today in the historic factory in Cunico (Asti), where it is able to produce around 300,000 bottles per year and has an aging cellar with around 1,000 hectolitres of grappa, some of which are over 40 years old.

THE PRODUCTION
Bosso has always carried out all stages of production in-house, from selecting the finest pomace to distillation, aging, and bottling, following rigorous quality control protocols. Distillation, the heart of the company, is carried out using a traditional system consisting of two sets of six copper stills, using the direct steam discontinuous method. Despite longer production times and a lower yield, Bosso's production process allows for grappas with greater aroma and flavor. With this level of quality, the company is able to distill up to 5,000 tons of pomace, equivalent to approximately 10,000 hectoliters of grappa. Experience, comprehensive management of the production process, and the flexibility of the facilities allow for customization of products according to market needs and customer requests, with defined minimum purchase quantities.

AGING
Bosso was one of the first distilleries to believe in the benefits of long-term aging for grappa, evidence of which is evident in our Moscato Stravecchia distillate from the 1950s. Our grappa is aged in Montechiaro d'Asti, in the historic building formerly occupied by Martini & Rossi. For the aging process, we use small to medium-sized chestnut, oak, and cherry barrels.

Thanks to our extensive experience both in aging grappa and in finding the best organoleptic combinations between aroma and bouquet, we know how to choose the right type of wood. Year after year, we carefully monitor our products and select the perfect time to bottle each batch. Our Invecchiata, Stravecchia, and Riserva grappas are specified on the label.
