Vinification Wine produced from mature and selected grapes of Negroamaro and Malvasia Nera harvested manually and further selected in the cellar. Maceration takes place in horizontal rotary winemakers. Once the alcoholic fermentation is completed at a temperature not exceeding 20° C, it is placed in new barriques for malolactic fermentation. Subsequently, after 9 months in French oak barriques, bottling and a short refinement in the bottle are carried out.

    We started the production of this Salice salentino rosso, made with negroamaro grapes (85%) and malvasia nero (15%) with the 2012 harvest.

    We harvest the grapes by hand and then in the cellar we carry out a further selection to guarantee the best possible quality.

    10 years of experience to produce an increasingly fascinating wine.

    Before proceeding with the bottling our CARATI spends 9 important months in French oak barriques.


     

    From the union of Bruno and Agnese in 1969 was born a familiar and business party that occupied them, with passion and achievement, during the ages ’70 and ’80 in the food retail sector. 

    In 1983 the family Andreetta started working, with a lot of attention and passion, in agriculture, dedicating and investing in the production of organic cereal, a sector completely innovative for that period. 

    Comforted by the results achieved in agriculture, in 2002 they decided to work in viticulture too
