Vinification We manage the harvest in three phases: early, at maturity and over-ripe. We carry out nighttime harvesting in the absence of light and at low temperatures and once brought to the cellar, we process the grapes in hyper-reduction. Once the alcoholic fermentation is complete, we vinify the wines separately and then assemble them at the end of April.

The name Sauvignon derives from “sauvage” + “vignon”, corresponding to the Italian “selvaggio” + “vigneto”. It seems that this term was coined because the Sauvignon vine plant, and especially the shape of its leaves, resembles that of wild vines. In confirmation, in the first written testimonies of Sauvignon, from around the 16th century, it is also cited with the term “fiers”, from the Latin “ferus”, or “wild”. 


 

Prepotto, a land where the grapes have unmistakable characteristics within the Friuli Colli Orientali DOC area, where the aromas stand out due to the unique microclimate created by significant temperature variations.

The Novello family harvests by hand the 11 hectares of Cappuccina-trained vineyards to ensure the best possible selection of grapes, which give rise to high-quality wines. From the oldest vineyards come the grapes destined for the "Ronco dei Pini" brand.
