Vinification We manually harvest the grapes at the end of August, destem them and press them softly to preserve the primary aromas as much as possible. Once fermentation is complete, the wine is sent to the second fermentation (Charmat method), and refined on the lees for three months. Once bottled, it rests for another two months before being tasted.

Ribolla Gialla takes its name from a curious fact: in the past, due to the massive presence of malic acid, the grapes literally boiled during maceration.

Today, with controlled-temperature vinification, this phenomenon no longer occurs.

This grape lends itself very well to sparkling winemaking as it is an acidic and savoury grape: here is our highly appreciated Ribolla Gialla Spumantizzata “Tre Lune”.
