Vinification After the first thinning of the grapes after veraison, the manual harvest in a box allows a further careful selection. In the cellar the grapes are disparate and gently crushed to allow a greater surface of contact to the wine with the skin during the alcoholic fermentation, which takes place in steel vats at a constant controlled temperature until the total exhaustion of the sugars. At the end of this first phase in wine it is decanted to eliminate the coarsest lees and left to rest on its noble lees, which, thanks also to the constant storage temperature, they help the performance of malolactic "fermentation".
Ageing It ages in 25HL oak barrels and, in part, in second-pass barriques. It is still aged in the bottle before being released on the market.
Color Deep ruby red color with delicate orange reflections for long aging.
Fragrance The aroma is intense, persistent, with notes of vanilla and ripe and woody red fruits.
Flavor In the mouth it is full-bodied and with a balanced acidity
Pairing Stew, roasted red meats, game and aged cheeses with polenta
