Grapes 100% Merlot
Vinification We manually harvest the grapes which, once pressed and destemmed, we place in steel tanks. Here the must macerates and ferments on the skins for about 20 days, carrying out malolactic fermentation at the same time. The racking involves the refinement of a part of the wine in French oak barriques. We usually bottle the wine in mid-December, and then allow it to refine in the bottle for a further 2/3 months.

The grape variety and wine “Merlot” are named in reference to the “blackbird”. Specifically, the dark color of the blackbird’s feathers is associated with the equally dark color of the grapes of the grape variety and the color of the nectar that is obtained. According to other scholars, rather than the color of the bird, the reference is to the predilection shown by the blackbird for these grapes and its tendency to attack and eat them before the others.
