Vinification Before, the Pinot Noir grapes are harvested by hand and are pressed using a soft technique. The grapes, which are lightly riddled, give the colour of the must the elegance and charm typical of this wine. The must starts the first fermentation at temperatures of around 15°/16° degrees followed by a period of maturation exclusively in steel. Bottling and second fermentation take place towards the end of winter, The period of aging on the lees is never less than 24 months and it is followed by disgorgement.

Fragrance An Intriguing bouquet with notes of acacia flowers and marshmallow (vanilla and strawberry), followed by hints of saffron and cream caramel.
Flavor In the mouth, notes of wild berries complete the pleasure. It is fresh and well-structured, here the great body and power, typical of Pinot Noir blend with the elegance.
Pairing A pleasant aperitif with a strong personality. IExcellent with ethnic dishes such as paella and couscous. Grilled vegetables, white meats and fish dishes accompany it wonderfully.
