Vinification | The grapes come from a vineyard with excellent exposure of more than 50 years: the slight over-ripening is harvested to have a greater concentration of aromas and a higher final alcohol content: they are vinified in white through a light soft pressing; follows fermentation at controlled temperature in a protected environment and in the absence of oxygen. At the end of the fermentation, a period of aging in steel for several months follows, where frequent batonnage is carried out to keep in suspension of the fine lees to have a greater structure on the palate thanks to the mannoproteins naturally present in the latter. Filtration and bottling follows. |
